For baking:
1 egg = ½ avocado

1 egg = 3tbs peanut butter
1 egg = 1tsp baking powder + 1 tbs vinegar
1 egg = ¼ cup apple puree

Cooking swaps:
- Make a breakfast scramble with crumbled tofu or tempeh.
