Plant-based meatball recipe

Throw these meatballs into some delicious pasta or on a roll with your favourite plant-based cheese and you'll have a delicious meal even kids will love!

Ingredients:

3 tbs oil

1-2 cloves of garlic

5 sliced mushrooms

2 tbs soy sauce

½ cup dry lentils

1 cup water

½ tsp smoked paprika

5 sundried tomatoes

Breadcrumbs

 

Method:

  1. Bring a fry pan to medium heat and add the oil, chopped onion, and chopped garlic then sauté and stir for at least seven minutes until the onions are translucent and tender
  2. Add the sliced mushrooms and soy sauce then stir though
  3. Add the lentils and water then stir through
  4. Boil for 25 minutes to reduce the mixture then fry for a further three minutes
  5. Spoon the mixture into a blender, along with the smoked paprika and sundried tomatoes, then blend to a smooth paste
  6. Spoon the mixture into a bowl, add the breadcrumbs and, using your fingers, combine and roll into balls
  7. Place the balls into a pan on medium heat and fry off until crisp and brown
  8. Spoon the balls onto spaghetti that’s cooked al dente
  9. Serve and enjoy!
